Roasty, Toasty Garlic Potatoes!

My goodness me, these are good. The crispiest, most flavorful potatoes imaginable!

And the best part? They're super easy to make!


This is one of those recipes that your guests will think took a lot of effort and hours to make, when in reality it's pretty much a quick toss and assemble job that takes 1 hour from start to finish! (maybe an hour and fifteen minutes - but that's that! ๐Ÿ˜ƒ๐Ÿฅ”)


Ingredients (serves 4)

- 4 medium potatoes (about 500g or 1 lb)

- 1 TBSP olive oil (extra virgin if possible, but if not that's 100% okay!)

- 2 TBSP minced garlic

- Salt and pepper, to taste

- 1 pinch parsley

- 1 pinch potato spice


Directions

1. Preheat oven to 180 degrees C (400 degrees F).

2. Cut potatoes into halves or quarters (depending on their size - you want bite-sized pieces).

3. Combine with olive oil, salt, pepper, and garlic; toss until potatoes are all coated.

4. Transfer to a sheet pan and spread out evenly.

5. Roast in the oven for 45 minutes to 1 hour - you're looking for beautiful golden-brown, crispy shells on these guys.

6. Check potatoes twice while they're roasting - about every 20 minutes or so - and flip them around on the sheet pan with your spatula to ensure even roasting and browning on all sides.

7. Take your taters out the oven, toss with parsley and potato spice, season to taste, and serve hot.
