Chocolate Peanut Butter Protein Ice-Cream! ๐Ÿฆ๐Ÿ˜

Let me say right off the bat that this recipe doesn't need to have anything "chocolate-y" or "peanut butter-y" in it if you'd rather go for a different flavor profile - this is, as we say, your party!


Personally, I LOVE me some chocolate protein powder...and let's not even get started on the awesomeness that is peanut butter in any way, shape or form. But I'm sure that anything you'd like to try - vanilla, strawberry, mint, cookie dough etc - will be equally delicious!


And just like our Mix 'n Match Protein Muffins, you can use whatever starchy veg you'd like as the base...and if you're not feeling the starchy veg, go for banana! I love using butternut in this ice-cream, but I'm super keen to try sweet potato and carrots too...stay tuned for feedback on how those turn out ๐Ÿ˜„


Ingredients (Serves 4):


- 350 g cooked starchy veg of your choice, OR 350g (approx. 3) ripe bananas.


- 1 cup (250 ml) milk or plain yoghurt

(full-cream/low-fat/fat-free...it's entirely up to you!)


- 64 g (2 scoops) protein powder of choice


- 1 tsp vanilla essence**


- 1 tsp cinnamon powder**


- 40 g peanut butter**


- 2 tsp unflavored gelatin powder


- Any other yummies you'd like to bring to the party e.g. cacao, nutmeg, ginger, honey, choc chips, raisins, nuts, berries, coconut flakes....there are so many sweet possibilities!



** These are totally optional; I mention cinnamon, peanut butter, and vanilla essence specifically because I always add them to my ice-cream ๐Ÿ˜‹.

Directions


1. Cook veggies until soft, then allow to cool down before adding to blender. (If you use bananas, please don't cook them lol - just add directly to blender ๐Ÿ˜‚).


2. Add all ingredients to blender, then blend until silky smooth (or chunky if you prefer - remember, all my recipes can be adjusted to fit your personal preferences!


3. Mix in the add-ons that you'd prefer not to blend into oblivion (want some nice chunky blueberry pieces, or crunchy mouthfuls of choc chips and hazelnuts in your ice-cream? Mix them in after blending the other ingredients ๐Ÿ˜ƒ).


4. Pour into a freezable container (or divide equally into freezable bowls or cups) and place in freezer to set. Leave to set for a few hours.


5. Take out of freezer. Eat. Savor the deliciousness. Weep with joy.
